Vegan Easter Brunch Menu
Holy Week is here! Steve and I are staying local this year, like we do most years for Easter. We will celebrate with my family for dinner on Holy Saturday, and then Steve usually attends the Vigil Mass because he works Sunday morning at the diner. I attend Sunday morning because I just love Easter morning Mass. Everyone in my family has to work Easter Day so I'm hosting a brunch for my sister and her friend & I can't wait! Are you ready for our 5-course meal for 3 people? Ha! Here's my plan for our vegan Easter brunch menu:
Vegan Easter Brunch Menu:
- Green Tea (because I am still off coffee!! It's been 21 days! YIKES!)
- Grapefruit- Orange Mimosas - bought oranges & grapefruits today and planning on fresh-squeezing both to mix with the champagne.
- Avocado Toast Triangles- self-explanatory. I love topping them with olive oil, salt & red pepper flakes, and chia seeds. I posted about this previously here.
- Gluten Free Berry Protein Pancakes - I purchased a mix and I'm planning to add protein powder, top with blueberries, strawberries, and this Vanilla Kite Hill yogurt.
- Cornbread - I love this recipe from AllRecipes.com
- Spinach and Broccoli Tofu Quiche. I shared the recipe for this in my instagram story Vegan highlights here.
- Vegan Sausage- we love Gimme Lean brand. They taste most like breakfast sausage in all our trials.
- Blueberry Lemon Ricotta Cake- going to attempt to make the vegan version of this recipe.
It's basically about to be Carb Nation up in here. I'm planning to make enough to share with Steve when he gets home from work, and to have for 50 days of Easter leftovers.
