The Best Vegan Sandwich
This is probably my favorite sandwich, vegan or not, of all time.
It is truly life-changing. Steve hates it because it contains “too many vegetables” but I think you’re going to love it. This is a vegan version of a sandwich from one of my favorite lunch spots in Ocean City, NJ: Jon & Patty’s. If you’re ever visiting you’ll have to go and order a veggie bomber sandwich. Until then, here’s how to make the vegan version at home.
Ingredients
2 slices Ezekial bread
1/4 -1/2 of an avocado, depending on your preference
cucumber slices
tomato slices
sprouts
vegan mayo (I love this one)
vegan pesto or basil (this is my fave vegan pesto)
mixed greens
Assembly
toast the ezekiel bread
spread mayo & pesto on either side of bread slices
layer inside ingredients according to your preference/least messy situation
slice in half
serve with a dill pickle and chips
This sandwich is super easy for lunches and light dinners, or whenever you are craving something filling and delicious. It is also great if you’re hosting guests who have dietary restrictions. Let me know if you try it by tagging me over on instagram stories.
